Extra Virgin Olive Oil (3 & 5 Liter Bag-In-Box) - 2026/2027 (PRE-ORDER)

Our new harvest is here! Pre-order now for shipping in early December.

After a year focused on pruning our trees, improving the soil and giving our olive groves time to regenerate, we've had an outstanding harvest. With more oil to share, we're bringing back our bag-in-box format, available in 3 liter and 5 liter boxes.

This year's oil is spicy, bitter, wild and incredibly dynamic. It has a smooth, creamy character upfront, followed by a long, lingering peppery and pleasantly bitter finish. As always, our unique location and soil bring distinctive notes of freshly cut grass and wild herbs. It's complex, vibrant and surprisingly easygoing.

A little more about how we made it this year.

We introduced a new cooling system at the mill, bringing the olive paste down to approximately 17°C before extraction. This lower temperature helps protect the delicate aromas and preserve the naturally occurring polyphenols that give fresh olive oil its characteristic bitterness and pungency.

The olives were processed using an Alfa Laval Olive Oil Booster system, with malaxation at 23°C to help preserve freshness and minimize oxidation. Finally, the oil was fine-filtered for clarity and stability.

We're especially happy to offer the oil in bag-in-box packaging again. By keeping air and light away from the oil as it's dispensed, this format helps maintain its freshness over time, making it ideal for everyday use.

And really, that's what this oil is for. Get some good bread, dip it in the oil, add a little salt and call it dinner.
