The oil has a smooth floral upfront taste profile with a long and lingering spicy bitter finish. Because of the unique location and soil, it always has the flavor of fresh cut grass and herbs. It’s complex but also easygoing.
Get a nice bread, dip it, add some salt and have that for dinner.

The olives were milled at 23° C on a nitrogen-flushed Mori-Tem system and fine-filtered for clarity.
